Cilantro Mint Lamb Chops

In the Spring, I can’t wait to grill up some nice lamb rib chops. This Cilantro Mint green sauce was easy to make in a mini food processor.

For the sauce/marinade:

2 cups Mint leaves

1cup cilantro

1/2 cup malt vinegar

1 Tablespoon honey (optional)

1/2 cup olive oil

1 small shallot

Juice of 2 key limes

Process until almost smooth, bit a bit chunky. This will be a slightly thin sauce. Add more vinegar if needed. Spoon half the sauce/marinade over the lamb chops. Let marinate 20 minutes. Place on a hot grill and cook to desired wellness. Remove and put on plates with some remaining sauce over the lamb.
