Luscious Low Carb Greek Wedding Soup with “Cauliflower Orzo”

When I was a young X-ray student, the Greek Cafe in our hospital made Greek wedding soup on Tuesdays. Tuesdays were the only day that there was a line all the way out to the hospital rose garden to get one tiny bowl of this luscious stuff. I got in that line early because I knew they would run out soon enough. I left out the breadcrumbs in the meatballs here. Cauliflower is a great tasting substitute for orzo pasta in this soup. Here’s the low carb version:

For the meatballs:

2 lbs. grass fed ground beef, ground turkey, or ground lamb, 1/2 cup crumbled feta cheese, 2 eggs, 2/3 cup chopped mint, 1 tablespoon black pepper. 3 small garlic cloves, crushed. 1 Tablespoon pastured butter for pan frying the meatballs. Mix and form very small bite size meatballs. Cook in a pan with the butter until done on all sides.

For the soup:

10 Cups organic, reduced sodium chicken broth.

1 Tablespoon Salt free Cavendar’s Greek seasoning-see “Products I Adore ” page.

1 small bunch escarole, chopped

1 cauliflower head, White part only, rough cut in a food processor while raw (rice size).

Add the cauliflower “orzo” to the soup.

Schwarma with Tahini Sauce

Schwarma 13If you have never tried schwarma, you must try it! It’s similar to the gyros of my youth, growing up near Tarpon Springs, Florida (my father’s hometown). It’s an Israeli version of gyros. You can serve it with pita bread or flat bread, but to make it low carb, I skipped the bread part. You will need a rotisserie kit for your grill or a vertical rotisserie. I got mine at Home Depot for $50 bucks. It’s awesome for making schwarma, gyros, and just plain rotisserie chicken.

First, the sauce:

1/2 cup tahini (sesame seed paste)-I used a Lebanese brand here
2-3 gloves garlic, crushed
1/2 teaspoon kosher or sea salt-not too much
2 tablespoons olive oil
1/4 cup lemon juice
1 teaspoon parsley or mint, finely chopped (optional)

Mix together until it looks like this:

Schwarma 6Then, for the Schwarma:

2 lbs chicken breast, boneless with skin & 2-3 lbs. lamb

For the Marinade:

5 cloves of garlic
½ cup of freshly squeezed lemon juice
¼ cup of olive oil
1 teaspoon cloves
½ teaspoon cumin
½ teaspoon caraway (ground fennel)
½ teaspoon cardamon
½ teaspoon of oregano or thyme
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon crushed peppercorn
¼ teaspoon of smoked paprika
¼ teaspoon ground ginger

1/4 teaspoon fenugreek

1 star anise

add 1/3 cup of fresh parsley or mint

Spread on the chicken & lamb, don’t be afraid to get your hands dirty and work it in. Now marinate for 4 hours.

Schwarma 4Now that it’s marinated, skewer on to the rotisserie:

Schwarma 9Trim it up and thread the trimmings on the ends. Tuck some onion and herbs in between.

Schwarma 7Place on the heated 350 degree grill, on the  rotisserie unit & start the rotisserie. Cook for 15 mins-30 mins and then start to shave the outside done areas onto a platter. Continue to cook, and then shave the done areas again until there is no more.

Then, enjoy on a plate with some of the tahini sauce. Yummy.

M Grill Brazilian Churrascaria Steakhouse: A Carnivore’s Feast in Los Angeles

I just attended a lovely wedding where the wedding reception was held at M Grill. The food was delectable for a carnivore like me. I was in heaven. Various meats charcoal grilled and sliced at your table. I tried a little of everything the gauchos brought around. There was an excellent hot sauce on the table. White table cloths and napkins added to the elegance of it all. They are located on 3832 Wilshire Blvd. in L.A. They serve shrimp, different varieties of grilled sausages, chicken wrapped in bacon, garlic beef, parmesan beef, lamb leg and rack of lamb, Picanha (pictured below), Costelao (very tender roast beef, a must-try), filet mignon, and my favorite, ribeye.
