Extreme Low Carb Pizza Recipe!

I haven’t posted in a while due to a bike *ahhh* accident that left me, unfortunately, unable to type and post. My neighbors saw me outside grilling and told me to- “Eh, you look …better…post something new on that blog”.  OK, hey, I’m BACK and this is a great low carb pizza based on Dr. Atkins’ recipe and is truly awesome! Here’s what you need:

3 organic, free range eggs

3 cups organic shredded cheese. This can be mozzarella or a mix of Monterrey Jack, Mexican, whatever you have in the El-fridgedoor.

A sprinkle of herbs you like. Here I used some Menudo Mix I had on hand. It’s oregano, pepper flakes & dried onion. It works.

It ends up looking like this, spread it on parchment on a baking sheet or pan. No need to be fancy. It’s just going to spread out a bit anyways. Place it in a pre-heated 450 degree oven. Yeah I said 450 degrees. About 15 minutes. It will be bubbly and look like a well cooked omelette. Don’t be discouraged. It will turn out good-I promise. Then it’s time to place another parchment sheet on top and flip the sucker.

Time to flip:

Yeah, that’s the way. Let it bake for another few minutes….then take it out. Add some low carb pizza sauce. Just a little. Don’t up the carbs with too much sauce. I used about 3 Tablespoons here….

Then add some more shredded cheese-not too much:

Add some onion and pepperoni… or whatever you like:

Now it’s starting to look like pizza:

Now, boost that broiler.

Now stay with it, don’t leave to take a phone call or watch the tele….When it’s done it will look like:

Let it cool somewhat. Just so you can cut it. If it’s cool enough and cut you can even pick it up like regular pizza, unlike my famous “meatza” recipe from my past posts that you need a fork for. Hope you like it but hey-this is not a LOW CALORIE pizza, it’s low carb, so don’t think you can eat Doritos and drink margaritas with it….and 1 or 2 slices at a time max, and still weight loss. Superb!

And it tastes Fla-mazing. Also- leftovers are great straight from the fridge for breaky in the morning if you like that sort of thing.
